And it's a choice made out of love for the land."},"content":{"rendered":"<p data-start=\"253\" data-end=\"488\">Lately, many of you have asked:<br data-start=\"298\" data-end=\"301\" \/><strong data-start=\"301\" data-end=\"366\">\"Why is your ros\u00e9 lighter? Why does it feel more delicate?\"<\/strong><br data-start=\"366\" data-end=\"369\" \/>The answer is simple, yet it tells a deeper story, one of brave choices and listening closely to the vineyard.<\/p>\n<p data-start=\"490\" data-end=\"718\">Climate change is no longer a distant issue. It\u2019s here, in our hills, in grapes that ripen faster, in dry soils, and in harvests that ask us to rethink what we once took for granted. So, we\u2019ve changed too.<\/p>\n<p data-start=\"720\" data-end=\"1115\">Until last year, we used to harvest our <strong data-start=\"767\" data-end=\"781\">Sangiovese<\/strong> \u2013 which makes up 70% of the blend \u2013at the end of August, and the <strong data-start=\"839\" data-end=\"856\">Montepulciano<\/strong> in mid-September. But starting last vintage we made a key change: we harvested <strong data-start=\"950\" data-end=\"972\">50% of the Sangiovese<\/strong> shortly after mid-August, to preserve freshness, natural acidity, and lower alcohol levels.<\/p>\n<p data-start=\"1117\" data-end=\"1278\">We also rethought the way we process Montepulciano: no more 2\u20133 hours of skin contact. Starting in 2024, it goes through direct pressing, resulting in a finer, lighter, more elegant must. <strong data-start=\"1203\" data-end=\"1225\">pressatura diretta<\/strong>, per ottenere un mosto pi\u00f9 fine, delicato, luminoso.<\/p>\n<p data-start=\"1117\" data-end=\"1278\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-medium wp-image-3528\" src=\"https:\/\/www.vignetivallorani.com\/wp-content\/uploads\/2025\/06\/Octavum-2024-Rosato-BIO-300x205.jpg\" alt=\"\" width=\"300\" height=\"205\" srcset=\"https:\/\/www.vignetivallorani.com\/wp-content\/uploads\/2025\/06\/Octavum-2024-Rosato-BIO-300x205.jpg 300w, https:\/\/www.vignetivallorani.com\/wp-content\/uploads\/2025\/06\/Octavum-2024-Rosato-BIO-1024x700.jpg 1024w, https:\/\/www.vignetivallorani.com\/wp-content\/uploads\/2025\/06\/Octavum-2024-Rosato-BIO-768x525.jpg 768w, https:\/\/www.vignetivallorani.com\/wp-content\/uploads\/2025\/06\/Octavum-2024-Rosato-BIO-18x12.jpg 18w, https:\/\/www.vignetivallorani.com\/wp-content\/uploads\/2025\/06\/Octavum-2024-Rosato-BIO.jpg 1193w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p data-start=\"1117\" data-end=\"1278\">And this means that since last year, our ros\u00e9 <strong data-start=\"1284\" data-end=\"1329\">no longer comes from two harvests, but from three:<\/strong>:<br data-start=\"1330\" data-end=\"1333\" \/>an early Sangiovese harvest, a later one at fuller ripeness, and finally the Montepulciano.<br data-start=\"1442\" data-end=\"1445\" \/>It\u2019s a more complex process, but it gives us greater control over balance, acidity, and finesse \u2013 always in tune with the vintage.<\/p>\n<p data-start=\"1280\" data-end=\"1695\">The result?
